A lot of days are crowded, but yes July 4th probably will be more crowded than July 5 because it is a holiday. The whole July 4th weekend will be very crowded though.

Tampa has Busch Gardens. Then there's the Everglades and the Keys to the south. I've been to all of these places but Busch Gardens and I would personally recommend a week/end at any of the Keys.
