Gregorian chant or Plaint chant is known as monophony. Many voices, unaccompanied, and all singing in unison.
Monophony. Monophony is the simplest of musical textures, and is one of the earliest historical musical forms. Plainchant, or Gregorian chant, is a commonly cited example of monophony, and was popular in Italy, Ireland, Spain and France. While 9th century plainchant incorporated extra voices in parallel fifths, Byzantine chant, Armenian chant, and Mozarabic chant are all strictly monophonic.
If something has a homophonic texture then it has a chordal texture :)

Whether or not Three Blind Mice can be considered a monophony depends upon the performance. If it is sung (or performed) as a simple melody with all participants singing or playing in unison (or at the octave), then it is a monophony. However, if the participants perform it as a round, then it is not monophonic, but rather polyphonic.
