Expiration dates are simply times that are recommended by producers to eat the product in a time that it tastes its best. For example, milk that expires tomorrow will actually not spoil for almost three weeks if properly stored. It is a matter of your preference on when taste becomes an issue of it being expired.
Mabye, but the label ussally says GUARANTEED FRESH, not EXPIRED.(at least with Doritos!) But after all, shouldn't those chips be gone?

I just ate some butterscotch chips that say they expired June 2010 and it's now may 29th and I didnt feel sick at all from it. I would say its rather safe.
Whatever it says on the bag, or if you can't read weigh yourself with the bag of chips then weigh yourself without the bag of chips and the difference is the weight of the bag of chips. Or you could just weigh the bag of chips, genious!
