In general, yes, paper is edible. But the nutritional value is extremely low. It isn't something you'd want to eat to supply energy and keep you healthy.

The amount of ink that would go into the food is probably minimal, but it's probably best avoiding using carbon paper on foodstuffs - if the ink comes off it may dye the food an odd colour, or make the food taste odd. Try tracing the image through greasproof paper (parchment paper), then turning this upside down before covering it with any foodstuffs. (So that no ink can possibly go into the food). Also, clear acetate plastic is easy to use if you need to copy an image using a food substance.
