Yes, you can save different creatures you create. although you can only play as the ones you make through the actual game as in the one on the planet. -There is a cheat that you can use, it was implemented in Spore in patch 1. Type "ecoadvantage" into the in-game cheat box when selecting your creature. This will make you be able to choose an already advanced creature. This only works for when your are starting out on the creature stage.
In the Spore Creature Creator, the Asymmetry button is located on the right side of the interface. It's represented by a symbol that resembles a split creature, allowing you to create uneven or asymmetrical features for your creature. By toggling this button, you can modify the left and right sides of your creature independently, adding more uniqueness to your designs.
You hold down "A" then pick your part and drag it on to the creature (QUICK TIP:hold the A button the whole time when before you're picking the part, when your picking the part, hold A when your putting the part on the creature then release.)
Click on the fight side of the interaction menu (the red one) and pick a command. Click on the creature you want to fight and let the fighting commence. The controls differ by the mode you're playing.
