No you cannot burn instant coffee; during the process in which instant coffee is made it is roasted at 180 degrees, so when you pour boiling water (which is 100 degrees) over the resulting granules it is not possible to burn the coffee.

However the taste of coffee changes distinctly depending on the order in which it is made. For instance if milk is added to the granules before boiling water the resulting taste is mild and creamy, on the other hand if hot water goes in first the resulting taste is full bodied and slightly bitter.

Does coffee dissolve in cold water and why?

Instant, freeze dried coffee will dissolve in water, the hotter the water, the faster the coffee dissolves. Regular coffee made from coffee beans, will not dissolve in water, instead hot water will get the flavor (oils and alkaloids aka caffeine) and aroma(oils) from coffee, and disperse it in the water; leaving the coffee grounds behind to be disposed.

Instant coffee in water is a heterogeneous mixture. When instant coffee is added to water, it can initially appear uniform, but the coffee particles may not fully dissolve, leading to visible granules or layers. Over time, if stirred thoroughly, it can become homogeneous, but the initial state is typically heterogeneous.

Will coffee dissolve in water?

Some parts of coffee dissolve in water, others don't. You can filter out the grounds after you make coffee, but you still have a solution, not just water. You can see it's coloured and can taste it's not just water. If you look on the ingredients on a jar of instant coffee, it often says 'soluble solids of pure coffee'.
