The sun emits ultra-violet (and infra-red rays) which are harmful for human health, especially the eyes. Shiny white surfaces reflect EM waves the best, and snow is a great example of this; so basically, skiiers wear sunglasses to protect themselves from UV radiation that is reflected at them from all angles.
