In Assassins Creed I: Sword, Dagger, Throwing Knifes, Hidden Blade, Fists.
In Assassins Creed II: There are 20+ Swords, 10+ Daggers, Throwing Knifes, you can buy Metal Gloves for Fists, Hidden Blade, Dual Hidden Blades (unlocked in game), Flash Bombs to stun enemies, Poison Hidden Blade to disable/distract enemies, throw coins to distract enemies (its in the weapons list).
If you're playing Assassins Creed 1, then you're playing as the legendary Altair. Who has different weapons than Ezio, who you play as in Assassins Creed 2 [my favorite], in this you have: Hidden blades [2], mini pistol, sword, dagger, fists, smoke bombs, and poison blades. All that you can access by selecting the weapon wheel in the game, if you have it!
The double hidden-blades. Good for everything, and always there when you want them; also very useful for assassinations or taking care of an errant guard.
Chaoticking:Don't forget the Hidden Gun,
that always helps with long ranged attacks.
There are a huge variety of swords and daggers, and you have the hidden blade, double hidden blade (replaces single one) poison blade, hidden gun, throwing knives, fists, axes, mauls and maces. There are also some additional supplies, such as medicine, smoke bombs, and throwing money.
At the start of assassins creed you find your character being ridiculed for something he did earlier. He is demoted and has his weapons striped from him. With each level you get to unlock new weapons.
By the end you should have:
Hidden Blade (1)
Longsword
short blade
Throwing knifes
GUNS:
Muskets
Flintlock pistols
BLADES:
swords
knives
hidden blades
PERMANENT WEAPONS:
tomahawk
Hidden blades
Bow and Arrows
Snares
Rope Darts
Knife
Fists
Dual Hidden Blades, Poison Blade, Fists, Sword, Dagger, Throwing Knives, and the Hidden Gun.

Yes. There are more weapons, scenarios, and extra features to play with. I found Assassins Creed (1) Repetitive.
yes, in total there are over 30 weapons he can use
For Assassins Creed 1 No, for Assassins Creed 2 yes.
Well it's very simple really. There is a special USB cable for connecting the PS3 remote to the PS3. That can also connect to the psp, on the ps3 controller side. then somewhere in the assassins creed menu. I hope that answers your question, but those weapons really aren't that great =(
assassins creed brotherhood, it has everything assassins creed 2 has and more which includes multiplayer modes new assassins in those modes and new weapons added onto the already solid game play, it also adds a solid new plot and brings some old enemies along with all the new ones.
