Temperature sensors are useful because they are digital. Since they are digital you can make graphs out of data easily. Instead of copying loads of data out you can make all the results into a table or graph in seconds, it is easier to send data, they measure to a high level of accuracy. They can measure higher ranges than normal thermometers, sometimes measuring the temperature with a thermometer may be hard because you may not be able to see exactly where the meniscus is on and you also have to get eye level to measure the temperature but with the temperature sensors you can read and the temperature will be measured to point of a degree Celsius also they aren't easily broken unlike brittle glass thermometers and you can record temperatures over long periods of time.

The disadvantages are the temperature sensors are expensive, the wires to measure the temperature may get tangled also, you need to know how to use a P.C/ Tablet to record and create graphs , the screens are touch screen and are small so you may need a stylus which is easily lost, there are lots of cable to plug in to measure the temperature, if you buy one it will very quickly become out of date and a smart phone with certain accessories may be able to do the same things and more for a more reasonable price.
