They are combusted ( burned) to make heat . This heat is used to heat water to superheated steam under pressure.

The superheated steam drives a turbine, which in turn mechanically drives the electrical generator. Superheated steam is steam that is about 300oC and with a pressure greater that atmospheric pressure. It is dangerous stuff.

The combustion of fossil fuels is an environmental problem ,as it releases carbon dioxide in the burning.

A power station needs some form of energy to mechanically rotate a generator to make electricity.

The other major source of heat in a power station that does not need combustion, is nuclear fuels. Nuclear fuels create heat by nuclear change , with in turn creates the superheated steam , and them it is the same process as above. .

Other methods of energy that can be used to create electrical power are, solar, wind, hydroelectric(dams) , tidal , and wave power.

Hydroelectric and Tidal use gravity as the primary energy source.

In power plants fossil fuels (coal, oil and natural gas) are burnt. The heat is used to boil water, and the steam is then used to turn electricity turbines to generate electricity. Unfortunately the burning also releases carbon dioxide (CO2), a greenhouse gas that is causing global warming.
