My best guesses would be:

1. To produce gold (Au) from other elements.

2. To explore what we today know as chemistry.

Alchemy supposedly is foundation or "birthright" to modern chemistry, which dates from somewhere in the end of the 18th century.

Alchemy drew primarily upon Metallurgy, chemistry and philosophy.

Most alchemists were actually focused on turning metals into precious metals at first, through some form of chemistry. As far as we know, they have all failed. Although there are theories that Nicholas Flamal (SP) discovered the philosopher's stone, which allows on to live forever and convert any metal into gold. Clearly, nothing's been confirmed, but supposedly, towards his unexplained death, he came into a large amount of money somehow.
