It depends on what the ticket is for and other circumstances, but here are the most likely things that will happen:

If you never even went to court, the court almost certainly found you guilty and added an extra fine.

So why does that matter if you don't intend to pay it?

Well ... you're eventually going to need to get a new drivers and/or vehicle license, and the DMV is going to make you pay those fines before you can get your license. You can drive around on an expired license, but sooner or later a police officer is going to notice, and then you're going to be in real trouble.
