How do you change the water chemical balance in your pool to stop it making your silver jewelry black?

that black discoloration is known as tarnish, or corrosion. A recommendation would be to not wear jewelry while swimming. The reason all of this is happening is because of the chlorine. Chlorine reacts to silver VERY quickly and will eat the metal away. You have two choices, remove the chlorine (unwise) convert to salt water, or NOT wear silver clad things in the pool

Is there an advantage to a black bottom pool?

No. It is purely an aesthetic choice. It is a myth that black bottom pools are warmer. Don't argue with me, I have proved this several times. Put a black plate and a white plate in the bottom of a pool and check it a few hours later to see if there is any temp difference....there won't be. Water absorbs all the heat in the first 12 inches.
