There is really is not much you can do. Supposedly there are various things that you can add to absorb the salt, such as potatoes, but I do not think they work and they all cost money. My advice is to eat it as is, if you can or throw it out and learn from your mistake.
When you are ready to use the sauerkrat, take however much you want out of the jar and rinse it off a little. This way the remaineder will stay preserved in the jar, but the portion you eat or cook with will not be as salty. And of course, next time use less salt when you make your sauerkraut.
