You can make lemon meringue pie! It won't take but two lemons though, and you can freeze the rest! To thaw lemons put them in a microwavable cup (I used my 4 cup measuring cup), and microwave about a minute and a half. They are real juicy.

∙ 12y agoI just made a really good lemon tart today and the recipe has:
A cup of lemon Juice
A cup of thickened cream
A cup of condensed milk
5 eggs
and finally 1 cup of caster sugar
The recipe I chose had no condensed milk in it, but once i added it in myself the tart mixture was rich and creamy and had that perfect yellow colour. If you want you can add yellow colouring to get that really cool yellow colour. The recipe is really easy. Just buy shortcrust pastry or look up a recipe for the pastry and put it in tin and cook it. Then once it is golden brown but still soft to touch poor the mixture in to the mould. Then bake for about 20- 30 minutes or until set. It shouldn't wobble much when you shake it. Whisk all the lemon micture ingredients at once. And whisk it to a light, creamy and smooth consitency. It should be quite a bit thicker then water, and the thicker, the less time it takes to set.
It is nice warm or you can put it in the fridge for another day. Icecream, cream or icing sugar and fruit would be a nice touch to serve with the tart.

∙ 11y agoLemons are fantastic. You could make lemon curd with them. Or make preserved lemons by covering them in salt and letting them sit for a few weeks. Then use those lemons in a dozen recipes.
