If you want to get an eggplant color with food coloring, just mix drops of blue and red together to get a sort of purple-ish color. Add more blue or red to get your desired eggplant shade. If you want a green eggplant color, then just mix yellow and blue together, with more yellow since green eggplants aren't super green.

∙ 9y agoThe common eggplant (Solanum melongena) is a teardrop shaped, purple fruit. In the U.K. it is also known as aubergine. Other names are melongene, garden egg, guinea squash or .brinjal. Just as the shape may change to long and thin to round as a ball, the color can be white, through the pinks and purples, to deep, dark almost-black. There are even eggplant that are scarlet (African variety) and some that are stripped.

It's probably less about the eggplant taking on the color of it's sauce or cooking liquid (although it can, to a degree) and more an issue of oxidation. Eggplant, much like apples and potatoes will start to turn a brownish, rusty color when exposed to oxygen in the air. The way that I combat this in my kitchen is to rinse the eggplant with water and a little bit of lemon juice (vinegar and other acids work as well), I stress "little bit" because eggplant is very good at absorbing the flavors of other things. This trick also works on apples and potatoes.
