All plants and vegetables absorbs visible light and reflects the colours that we see, so green trees reflect green light, yellow meadows absorb all colours except yellow.
A red apple would absorb most of any blue light, but if there were no other lights from the spectrum for it to reflect we would see little, remember there are 7 visible colours making up white light these are - Red, Orange, Yellow, Green, Blue, Indigo, Violet.
An apple appears red to the human eye because it reflects the color red or, conversley, because it absorbs its complimentary color, green. If you shine only green light on the apple (and no red light), it will absorb the green wavelengths and reflect nothing - therefore it will appear black, which is the absence of light (or color).
Not all apples are green! they could be red or yellow too. The skin is the outer coating which makes different apples look different. But when you split it open, they look relatively the same on the inside. The skin has pigments which give colour(red-heads have a pigment called carotine in their hair, wich makes it look orange-the same as apples).
Well, when something has color, whatever color it is, is what is being reflected therefore if the apple is red then the absorbed color is all of the colors except red. Now, if it is a mixed color such as purple, the reflected colors are red and blue, therefore the absorbed are all but red and blue.
