Just about all the work in the manor house was done by servants. This included cooking, cleaning, doing laundry, sewing and such labor, but it also included such things as keeping track of the lord's finances, which was done by a steward, and doing secretarial work as well.
We have to be careful not to be carried away by the etymology of "servant" and the fact that it is related to the word "serf" and the Latin word "servus," which meant slave. Neither serfs nor medieval servants were normally slaves. The words are related, but they do not mean the same thing.
If by servant, you mean serf or peasant, then they farmed. A serf would sign a feudal contract basically saying that he and his family and their children would work the land and give some of the food in exchange for shelter, clothing, etc.

Someone had to clean the dungeon. Servants did whatever they were told to do. So yes, some worked in the dungeon. When they finished cleaning that, they went on to the next task. Some also brought food to any prisoners in the dungeon. Servants did their job like all employees in all eras.

There was not the job of a plumber in the middle ages since there was no plumbing to fix. This won't happen for hundreds of years.
