What do the amazing race contestants do when they are not being filmed?

My guess for this and most other 'reality shows', that they are filmed during most of their waking hours, then the producers and editors piece together the parts that they think will be the most entertaining and get the best audience ratings.
In addition, it sounds like they hang out with other members and go to sleep during the 12 hour break period between legs. They probably still film this though in case something happens.
