True hibernation such as in rodents is defined by drastic changes in body temperature, dropping to just a few degrees above ambient temperature (the temperature in their den), slowed heart rate and respiration. Rodents are in a deep torper that takes some time to wake from, but they do periodically wake up to eat stored food, urinate and defecate.

Bears on the other hand, only drop their body temperature a few degrees, although their heart and breathing do drop. They are able to wake up faster if they are disturbed, but do not eat or drink all winter, they are able to process urea into water.

Technically, as the other anwerer said, bears do not hibernate, but there isn't a good term for what they do. Some use 'winter lethergy' or winter torpor' or some other phrase to distinguish it, but hibernation is commonly used by the public.

Some say that this adaptation makes them more efficient hibernators, and they should be 'true hibernators' while rodents are reclassified, but in science, often tradition takes precedence, and details of rodent hibernation was studies before the differences between them and bears were known.

When bears wake from hibernation, they eat anything they can find. This is especially true for black bears. They eat small animals and fruit. When they are hungry, they have even attacked and eaten people in the northern part of their range. (The larger animals are mostly farther to the north of a range.)
