The fat of the sacrifice represents sin, which the sinner separated from the offering and gave it to the priest, who represents Christ our mediator. The priest who is always there to accept the fat ( sin ) from the sinner, take the fat and in turn places it upon the altar of burnt offering to be consumed, never to rise or be remembered anymore.

2 Samuel 12:13 -And David said unto Nathan, I have sinned against the Lord. And Nathan said unto David, The Lord also hath put away thy sin; thou shalt not die.

Psalm 37:20 - But the wicked shall perish,and the enemies of the Lord shall be as the fat of lambs:they shall consume;into smoke shall they consume away.
