pH balance refers to acid /alkaline balance. Fruit is the least of it.A body with improper pH balance in urine produces acidosis or alkalosis. Both are risky medical conditions.

pH is a measurement of the number of protons that a given substance gives off. for example, HCl, is Hydrochloric Acid. For 1 mole (a measurment of how many molecules are in a given solution) of HCL, it gives off 1 mole of protons [Hydrogen Ions (H+)] Take the Log of that number on your calculator, and multiply by -1 and you have the pH. The pH scale goes from 0 to 14. As the number gets closer to 7, more H+ ions are being paired with Hydroxide (OH-) ions. If there are an equal number of H+ and OH- ions, they will pair together forming HOH (more commonly known as H2O/water). Water has a pH of 7. If there are more OH- ions than H+ ions released by a substance, it is basic or alkaline and the pH will be greater than 7. For example, Sodium Hydroxide (NaOH) donates 1 mole of OH- for every mole of NaOH. Also, the pH scale is an exponential scale, so a pH of 3 is 10 times more acidic than a pH of 4. And a pH of 12 is 10 times more basic than a pH of 11.
