It means that Jacob like looked at Renesmee and saw the love of his life. Like Quil and Sam and some other people in the pack, they never find another love. The person they imprint on is the only person they will love.

That could be true, but Jacob himself explains what exactly imprinting is in one of the books. Imprinting happens upon first meeting. Once a werewolf sees that certain person, they are completely devoted to them, this is why Leah Clearwater was hurt by Sam Uley (Sam was in love with Leah but imprinted on another woman). However, imprinting does not necessarily have to be on the basis of love. Though feelings of love may develop, a person who imprints becomes whatever the imprintee (I don't think that's a real word) needs them to be. A friend, a brother, a lover, or even a nanny. Quil could grow up to marry Claire, but at the moment she is only two so Quil acts as a babysitter and a big brother to her. It's the same as Ren, Jacob is like an uncle or brother to her right now.

Well and Jacob explains in the book imprinting as like gravity moves, and like nothing else in the world matters except her. You would do anything for her, become anything for her.
Edit 3: It says in the summary for each character, that he becomes an older brother figure to her. So it doesn't always mean like a boyfriend- girlfriend love.
