It's a term of endearment, like dear or pookie or pudge-pot or any other nonsense "pet" name. It doesn't really "mean" anything specific.

I know this is a rather unromantic view, but it's not like it's a magic word that binds him to you forever or anything, so wishful thinking aside, at best it means that he thinks you'll like it and cares about pleasing you, at least in a small way that doesn't actually cost him anything.

Oh, dude, when a guy calls you "honey," it could mean he's sweet on you or just trying to be endearing. Or maybe he's just really hungry and thinking about pancakes. Who knows, right? Just don't go assuming he's a beekeeper or something.
