Oiling prevents rust by repelling water. As we all know, oil and water don't mix, therefore, a coat of oil (or silicone or grease or something else that repels water will keep water away from the metal parts that could rust.

Water is required for iron to react with oxygen to form iron oxide (which is rust). Oil and water do not mix, so if metal is coated in oil, water will not penetrate through the oil to reach the metal. Oil also keeps out oxygen from the air, which is the also required for rusting.
