There are many symbols for Easter such as a lamb, eggs and the crown of thorns.
Some traditional Catholic Easter food traditions include eating lamb, ham, hot cross buns, and eggs. Lamb symbolizes Jesus as the "Lamb of God," while ham represents the end of Lenten fasting. Hot cross buns are marked with a cross to symbolize Jesus' crucifixion, and eggs represent new life and the resurrection.

I know of no church that eats lamb at communion.
The lamb in the Mourning picture symbolizes the innocent people. The lamb represents the Savior who took on the sins of the world.

Traditions are difficult to change, but not impossible. If you would rather use some other animal to symbolize Easter, go ahead. If you are persuasive enough, you may get other people to agree with you.
