"Mary" is from the Hebrew name "Maryam", which literally means "bitter". Why would parents call their daughter Bitter? This word also means the plant "myrrh", which is more likely what they had in mind.

"Kate" is a diminutive of "Katharine". Nobody knows the exact origin of this name. People originally guessed that it came from the Greek word for "pure" (katharos) but it probably doesn't. It more likely comes from "Ekaterina", but nobody seems to know what this means either. One guess is "tortured" (because St Katharine was tortured) but this is only a guess.
