There are thousands of soups and many of them are delicious. -But how we describe a taste is very tricky. There can be simple tastes, for instance one of my favorite soups is 'Cream of Broccoli' - I would describe that as 'creamy, heavy, broccoli tasting' - and yet that seems inadequate to me.
