A NOOKbook (file format) is basically an ePub file with Adobe DRM, very much similar to Sony's ePub files, but with a slightly different Adobe DRM Version, so they cannot be opened by third party readers or software if they have DRM.
There are (probably illegal or at least dubious) methods to circumvent DRM on NOOKbooks so they can be converted to ePub files readable by third party providers (e.g. Sony).

Nook eBooks support file formats like EPUB and PDF. EPUB is the most common format for Nook books as it allows for interactive features and adjusts text to fit different screen sizes. PDF format is also supported on Nook devices, but may not offer the same customization options as EPUB.
