Fire mainly gives out heat, light and other reaction products (soot, coal). What you mean is actually the flame, the visible part of fire.
The colour of the flame depends on the amount of oxygen involved. If the oxygen level is very high it will give out a blue colour, the less oxygen the fire receives, the less thoroughly the fire burns, resulting in soot particles in the fire. The red in fire means more soot particles.
