Camel milk can be kept for longer duration at room temperature than other milk. Milk will stay freshing for longer if it is kept in the refrigerator because the lower the temperature any food or drink is stored at the slower the rate of bacteria multiplication. For example if you buy a bunch of grapes and break the vine so you have to bunches of grapes, and place one bunch in the refrigerator and one in a fruit bowl at room temperature, the ones out at room temperature will have a higher rate of bacteria multiplication meaning the bacteria grows much faster than the ones in the fridge.
When milk is left at room temperature the reason it spoils is due to the bacteria in the air. The bacteria called Lactobacillus converts the lactose in milk into lactic acid which makes it sour. When milk is refrigerated the bacteria growth is prevented.
