As it turns into a gas, the liquid boils. The temperature at which it boils is called the boiling point and is a constant if the pressure stays the same. Until the boiling point is reached nothing interesting happens to liquid while it heats.

First off you have to know why a liquid is a liquid. There are five "states" or "phases" of matter, the three most common being solids, liquid, and gases. There are many factors that determine the phase of a substance, temperature being one of the biggest. A substance changes its phase when its molecules become more or less active. Typically when a substance is heated the molecules become more active and begin to bounce off of each other and the amount of space between them increases forming a looser bond. Conversely, when you cool a substance its molecules usually become less active and they rest more tightly together in a more fixed position next to each other.

Liquids can produce different effects when being heated depending on its chemical makeup but if you're looking at a singular substance you can usually count on the molecules getting farther and farther apart until you form a gas. If you're looking at a mixture of two or more substances you might add enough energy (heat) to trigger a chemical change. During a chemical change the molecules of the substance change to gain, lose, or exchange atoms to create an entirely new substance as opposed to phase changes which are entirely physical. For example you can freeze, melt, and boil a cup of water all you want but in the end you'll still be able to get your water back; however, if you heat a cup of egg whites the change is irreversible.
