Perhaps nothing. That will depend on a number of variables, including how far past expiration it has gone and how it has been stored. I have found that mozzarella gets softer as it ages which makes it harder to shred. Older mozzarella also tends to be more oily when it melts. The flavor changes, too. If you don't see mold and don't smell off-odors, that will be up to you as to whether or not you want to use it.
