Peeta's conditions changes throughout the 74th Hunger Games. He first starts with the Careers, and his condition is fine. Then he is injured when he tries to leave the Careers, and his condition is critical. Katniss find him, and tries to nurse him back to health. He loses his leg in the Games, and it is replaced with a fake one after Peeta and Katniss are declared Victors.

She doesn't act very surprised because when Peeta told her that Cato cut him Katniss doesn't find it surprising because Cato is a very strong tribute with many strengths and abilities that other tributes don't have. I hope this answers some of your question!
