The best knives are made of various high carbon tool steels and martensitic stainless steels such as O1, Cpm D2, 440c,Ats34, Cpm s30v, etc. They can also be made of a few types of ceramics, but these tend to be more difficult to sharpen and easier to break with very little; if any, advantage.
As for handle materials, there are several options: Many different types of woods, Micarta which is a inexpensive, durable and moisture resistant material, bones, antlers, "mother of pearl", and even gemstones which is the best handle material available (naturally, the most expensive as well). Guards/bolsters and pommels are generally made of non ferrous metals or either austenitic or ferritic stainless steels such as brass, nickle silver, 304 stainless, bronze, etc.
The high end knives might have fittings made from modern damascus which is different grades/types of steels forge welded together in a way that creats specific patterns. This can also be used as blade material.
