It depends on the type of work is being done with leather. If you work at the factory or tannery - you would be known as a 'tanner'. If you make products from leather, it would depend on what is made.....i.e. saddles/saddlemaker - shoes/corwainer - bags,belts/leathersmith or leather worker. Each leather trade would have its own name. It would depend on the product being made.

Leatherworking is a profession that allows you to use leather to make Leather and Mail armor. Leather is provided by a Skinner (who uses a skinning knife to skin slain beasts). Leatherworkers can also improve such leather by combining multiple lesser pieces of leather into a single higher-grade leather.
