A syphon works by gravity and cohesion of the liquid molecules. The "target end" (where the liquid will flow to) of the syphon hose must be lower than the "source end" (where the liquid is draining from). The hose can go uphill from the source, as long as the target end is lower than the source.

The flow starts by submerging the hose so it is completely filled with the fluid, covering the target end, and placing the target end lower than the source. When the target end is uncovered, the flow will begin. The target end can also be sucked on to start the flow (be careful not to get a mouthful).
