Well, there are lots of kinds of poetry. Some of it rhymes, like the old Roses are Red / Violets are Blue idea:

And there is free verse that doesn't rhyme, but which is a more popular form for modern poetry:

Which still captures some of the idea of the first poem, but just expresses it in a different way. The idea of poetry is basically taking a big idea that you could write about with a lot of words and trying to compress it into just a few words, and get that concentrated purity of meaning.
