The way you show a character's age by the way they speak is to have them say things that someone their age would say. Listen to the way people talk -- young people use a lot of slang and talk about doing things; old people use old-fashioned terms and talk more about abstract ideas.
You just need to go listen to some people talking, and listen like a writer would listen. Really pay attention instead of thinking about other things.
The conversational exchange between two or more characters in a poem is called poetic dialogue. It can help bring the characters to life and add depth to the narrative.

It gives you additional characters on some of the levels. Example: General Grievous gives you a buzz droid. Dagobah gives you a skeleton. Cloud City Trap gives you Han Solo in carbonite and so on.
It gives them clues about what problems a person may or may not have.
