Uninterrupted Power Supply (UPS) is a device that being used to secure the stability of power supply for the protected equipments (which are mostly IT equipments like computers and servers). If there has no UPS, sudden fluctuations of the utility power (so called raw power) will affect the business operation.
Basically, uninterruptable power supply is very much about how it sounds. It is a power source that will not be interrupted for reasons like power outages. At the hospital, where I work, we have certain power outlets in each room that can always provide power. These outlets run from a different electricity source then the other outlets by using generators to supply that power.

In an uninterrupted power supply there has to be a source of power when the electrical utility is not there. The only supply that is available is a battery that is in or connected to the UPS.
