I think you may be taking it a little too literally. I think that what is meant by 'created by the mind' refers to our perception of the world. Our senses are not necessarily what is, but what we percieve. Just for example, if you were looking at a cloud, you would not really see that cloud, you would only percieve the cloud through the light hitting the cloud, rebounding and hitting your eye which then translates the pattern of light and colour into an electrical signal which reaches the brain which translates the signals into our sense of sight. We don't how how something really looks, but we know how our brain interpret the stimuli. All we know in the world is our perception, which is created by our mind through the signals of bioelectricity. So, therefore, our world (sights, sounds, sensations) is created by our mind.
