Wait until the temperature rises in the freezer to start cleaning. This way the cleaning solution will not freeze on contact when it hits the freezer's walls or floor. When finished, wipe the inside dry with a towel and plug the freezer back in. Replenish the contents as well.

Anyone who has run a restaurant knows that one of the most important aspects of running a restaurant is keeping the freezer clean. Not only is an unclean freezer a potential health hazard for the restaurant’s customers, but an unclean freezer can also increase food costs and decrease profits if it is a harborage for mold and other organisms that may damage the stored food. The first step in cleaning a commercial freezer is to turn the unit off so that there is not a danger of electrical shock while the freezer is being cleaned. The next step is to lay a cloth, old newspapers, or other covering at the bottom of the freezer and underneath the freezer in order to absorb any excess water that will fall from the freezer as ice and frost melts. All food items must then be taken out of the freezer and stored in another temperature-controlled environment. Once all items have been taken out of the freezer, any trays, shelves, or other removable components must then be taken out of the freezer and washed. Once all removable components have been removed from the freezer, the freezer should be allowed to completely defrost. The freezer walls and floors can then be cleaned with hot water and a cleaner that is safe for use on food contact surfaces. The freezer walls and floors should not be cleaned until all ice and frost has been removed from the freezer. Once the freezer has been cleaned, a dry rag should be used to remove all traces of water from the walls and floor of the freezer.
