The process is called plate tectonics in general, which is the movement of lithospheric plates on top of the asthenosphere. Subduction occurs when an oceanic plate and continental plate collide. The more dense oceanic plate "subducts" or moves underneath, the less dense continental plate.

It is called a convergent plate boundary and fold mountains usually occur. The Himalayas were created this way by the Indian plate colliding with the Eurasian plate.
