Preservative 211 is Sodium benzoate. It is used to kill bacteria and fungi in acidic conditions - low ph, eg in fizzy drinks, cordials, jams, vinegar based preserves, and citric acid based juices.

It is being researched as to whether this preservative causes cancer by damaging the DNA of cells. This may also lead to many neurological diseases such as parkinsons.
