This is good for separating a liquid from a solution. For example, water can be separated from salty water by simple distillation. This method works because the water evaporates from the solution, but is then cooled and condensed into a separate container. The salt does not evaporate and so it stays behind.

Separating a solid from a liquid from evaporation is like dissolving some amount of salt in water and then heating the solution such that all water is evaporated and only left behind is crystals of salt again. The water evaporated can be collected through the process of distillation. In this way one can separate a solid from a liquid. But it doesn't works for every solid liquid solution.

This is called distillation. It is separating two components of a system based on their different values for volatility, which is the tendency for molecules to leave the liquid phase, or evaporate.

An example of this is salt water, where water has a moderate volatility and sodium chloride (table salt) has almost no volatility. As a result, when the solution is left undisturbed in a dry room for long enough, or boiled, the water all evaporates off and the solid salt remains.
