A sugar maple is a variety of maple tree common to the American Midwest and New
England. In the spring when sap begins to flow from the roots, sugar maples are tapped--that is a tube is pounded into them that allows sap to flow into collection containers. This sap is taken to a preparation building called a sugar bush where it is boiled down to reduce the water content and concentrate the natural sugar to produce maple syrup.
