Hospitality as defined by a host/hostess as the welcoming of a guest into one's home or place of business, or a resting place or a place of healing like a hospital, usually coupled with creature comforts such as chairs, beds, dining tables, and some sort of beverage and meal service like at an Inn, or in a special place in your home, the parlor, the dining room, or a guest room over night, a reception area in a hospital or doctors office, etc.

Historically some homes were used as inns, before the advent of permanent inns, later hotels, and modern motels. Bed and Breakfast today are known for their "hospitality" and little touches of gentility from the Colonial period to the Victorian era. Example; Airports today feature hospitality clubs and areas with overstuffed club chairs and beverage service requiring a membership fee.

Catering is defined today as the carrying in of good food , usually off-site like to a home or business, or popular outdoor site for say a wedding or family reunion. The food is usually more upscale and larger amounts of picturesque food for cocktail parties, receptions, and weddings, etc. Many Restarants cater, but most fine caterers limit their services to just catering.

Caterers are especially handy if there is no on-site kitchen, or power. Most have traveling kitchens or superior modes of delivery. To have an event catered means the host doesn't shop or cook, and better yet wants to spend his/her time greeting the guests...terribly important in business relationships. Large Weddings are a must, as the host will be too exhausted, nervous, or can't enjoy his guests if doing the food service, not to mention having little time to dress or groom appropriately or be in the photos.

The hosts, perhaps a Bride & Groom or their parents, also usually care a great deal about the impression the food makes. Catering can be just the delivery of the food with service by the host or his own household, or the best case scenario is to have the caterer come with his food and his crew and serve it, making sure that the set-up, serving, and clean-up is done right, again to make an impression and to save the host from the drudgery of the Kitchen.

Caterers are generally chefs or gourment cooks, and have natural abilities at organization, menu planning, and are detailed in their thinking. The work well with most clients, or other event or wedding planners. Beware of Caterers who serve the same dishes over and over, or who use frozen entrees without garnishing or creative new sauces, or do their own baking, etc. You want your event to be unique. Grocery Store trays all look alike and may say to the guest...you don't care.

Catering can also involve Cakes or Florals...always look at pictures of a Caterers' or Cake Decorators Work, and work place, and delivery vehicles....they must be picture perfect and spotless. When friends and family tell you they want to cater...is it a gift or will they send you the food bill, spend more than the budget?... because in their mind their labor is a gift.

This could cause trouble down the road and put strain on your relationship. Ordering trays from the super deli- Who will refridgerate the food, how will you keep it hot....Will mayonaise dishes sit in the hot sun? Who will serve it and clean-it up? It won't go to the table on its own, and you don't want to be chasing paper plates in your high heels, when a brisk wind comes up. A caterer is a good thing.
