There is no Hebrew word for chaos. Israelis usually just use the English word, pronounced kah-ooss (×›×וס).
You could also poetically say matsav shel tohu vavohu (מצב של תוהו ובוהו). It means situation of tohu vavohu. [tohu vavohu is a phrase taken from Genesis that means "unformed"]
