At the beginning of the Grumble Volcano track, turn around and mini-turbo into the lava directly behind the starting spot, then, when you are dropped back onto the track, mini-turbo again onto the platform on the left (or right in Mirror mode.) You only have 2 minutes to complete this; however the world record is only 19 seconds, so you will have plenty of time.
