With as much as there is in the game is most certainly becomes a matter of opinion. In any case a really bug advantage is the never-ending-ness. Quest are randomly generated. Even so, if you play the game properly [not using console cheats or fast traveling all the time] It is most certain that you will not be done with the game in it's entirety by the time the next DLC is released. The greatest thing about DLC's for Skyrim is that they will be more of expansions rather than addons which also greatly raises the value of the unending barrage of quest play and leveling.
OK well i will go over the 3 basic class things, you could be a warrior, a mage, or a archer guy. i think archers are bad, bows are under powered unless you level up you Archery a bunch, and lots of fighting in skyrim is in close quarters of dungeons. the warrior can be really good, or horrible. To be a warrior you need to be able to anticipate where the opponent will strike and i think it is harder than most other classes. Now i think the MAGE is the best because there are powerful close range spells, longer ranged spells, summoning spells, healing spells, and even more! and spells only take one hand to wield so you could wield 2 spells or a spell and a shield or and a sword (which is what i usually do) so i think thats the best but it's a matter of opinion
The wondrous thing about skyrim is that there are no "Classes" to choose from. You are able to build your character any way you want. The best thing to do is experiment and try to find a style of play that best fits you. My preferred way to play is building up the sneak tree to win 1v1 fights through assassination. However others prefer to be more durable, ranged, fight through magic, etc. To truly answer your question, there is no best character. Just a style that fits the player.
In the base version of the game, the best weapon is Chillrend (if acquired at level 46+) for its absurdly high frost damage enchantment.
For the Dragonborn DLC, Stahlrim weapons are the best not for damage output, but for a permanent frost damage enchantment when mixed with matching armour.
For the Dawnguard DLC, Auriel's Bow is the best because it can either blot out the sun for vampires so they can roam around during the day unharmed or use the sun as a weapon against the undead.
